Salted Anchovy Fillet:
Each individual anchovy fillet is inspected before being treated with fresh sea salt.
The salt is both bacteriologically and chemically controlled within large vats. This method used prevents any germs from developing. The skill with which the salt is dosed produces a high rate of dehydration to eradicate any microbiological threat.
